I have to admit I was actually nervous about dinner last night. It has been literally years (thanks Covid) since I have had the family over and in that time dezi cooks has taken off, which I love and am so grateful for, but that also adds a little more extra pressure, if you know what I mean? Cooking for a lot of people...it’s been so long.
Those feelings just mean you care, I really want people to enjoy the food and being in my home. Seeing guests go up for seconds, lots of “mmmm’s” makes me so happy. A great night filled with lots of love, laughter and celebrating #heartisfull

As a seasoned campaigner I know it’s always a good idea to wear something with a stretchy waistband. Orthodox Easter 2022 did not disappoint ♥️😄 everything was DELICIOUS

Amazing food, tender crispy skinned lamb on the spit, fabulous desserts, a piñata, cracking of the red eggs and of course the traditional bonfire and marshmallow finale.

Best of all we got to enjoy it all together as a family. Lots of love and laughs, thank you so much to my brilliant cousins Jenny & Peter for having us xx

Octopus on the BBQ, probably one of my favourites 😋♥️ Are you a fan?

Fresh tumbled South Australian Octopus leg/legs
1/3 cup Olive Oil
Lemon
1 tablespoon Greek dried oregano

1. Wash and dry octopus leg
2. Remove some of the skin (darker colour) if you like but not all, it should peel off as you pull it from the top.
3. Ensure leg is dried well before placing onto HOT BBQ, and depending on the size cook for 10 minutes each side
4. While the octopus is cooking make the Greek elixir; Juice the lemon and add the olive oil using a fork to whisk it together. Lastly add the oregano.
5. Once cooked place octopus into a shallow dish and pour over elixir.
6. Slice, serve hot & enjoy.

Grilled zucchini, pita bread, taramasalata, spicy pumpkin dip, greek salad (minus the feta) & kalamata olives.
If you are having diary you could add fried saganaki too 🍋

It’s It’s a soup kind of a day and perfect for those who are fasting… like me 😉

Quick and easy to make:
2 carrots
1 stalk celery
1 brown onion diced
1 grated large garlic clove
1 zucchini
3 button mushrooms
4 small stalks silver beet
1 tsp vegetable stock powder
3 bundles of Misko fides thin noodle nests @miskopasta @basile_imports
1 tin san Marzano tomatoes/ any tomato pomodoro.
1. 5 litres water
Pinch of salt, sugar, pepper and
If you are not fasting I would add a piece of parmasen rind (remove after cooking) & 1 tbs bone broth concentrate

• finely dice all of your ingredients.
• Add a drizzle of olive oil to the bottom of your pot and gently fry the garlic and onion first.
• Then add in remaining vegetables, toss to coat and sauté ( I leave the silverbeet to last)
• Season with salt and pepper. Add tomatoes, stock powder and water.
• Once it is simmering add your pasta/noodles
• Boil till noodles and veggies are cooked
• Ladle in your bowl and top with some grated pecorino cheese if you like . Enjoy x

As part of our culture and Greek traditions some have been fasting since the beginning of lent, others starting tomorrow like me, some not at all.
In my view that’s totally fine, each to their own, there is no judgement here xx

I will not have meat until Easter Sunday, but I am having dairy. You can still have some goodies like prawns, calamari and octopus as they don’t have blood.

For the rest of the week I will be sharing meals like this;
Sweet chilli prawns, with boc choy & steamed rice. Little effort, and very tasty.

• Fry 16 green prawn cutlets in 1 tbs olive oil and fry for 1 min. Turn over, season with salt & fry for another 30 seconds. Remove from the pan.
- reduce heat to low, add a drizzle of olive oil, 2 grated garlic & 3/4 cup sweet chilli sauce .
- Add prawns back in and toss to coat in the sauce. - Optional: add some sriracha sauce if your like more spice 🌶

Today’s specialty on the Glamping menu : Pasta Genovese made by @giovannidifabrizio . Under my mountain of freshly grated paramasen is a white sauce; pork and beef mince in white wine along with finely chopped veggies.
